Banana & Egg Pancakes

This breakfast is vegetarian and oh-so-easy! This breakfast is great for every member of the family’s morning moods because it is full of Vitamin B6, which helps with fatigue and moods. It is also high in fiber, protein and potassium. It takes less than 10 minutes to prepare and serves 4.

Ingredients

• 1 banana
• 2 eggs
• 1⁄4 teaspoon cinnamon
• maple syrup, or honey, to serve

Directions

1. Mash the banana with a fork in a bowl.
2. Add eggs and cinnamon. Mix until combined.
3. Heat a nonstick skillet over medium heat. Add a spoonful of batter and

cook for 3-4 minutes, then flip and cook for an additional 3-4 minutes. 4. Serve with maple syrup or honey. Enjoy!
